# What You'll Need:

→ Ramen Buns

01 - 2 packs (3 oz each) instant ramen noodles, seasoning packets discarded
02 - 2 large eggs
03 - 1/4 teaspoon black pepper
04 - 1/4 teaspoon garlic powder (optional)

→ Cheese Filling

05 - 1 cup shredded mozzarella cheese (about 100 g)
06 - 1 cup shredded cheddar cheese (about 100 g)

→ For Cooking

07 - 2 tablespoons unsalted butter or neutral oil

# How to Make It:

01 - Boil ramen noodles following package instructions, usually 2 to 3 minutes. Drain thoroughly and let cool slightly.
02 - In a bowl, whisk together eggs, black pepper, and optional garlic powder. Add cooled noodles and mix well.
03 - Divide mixture into four equal portions. Press each firmly into a round patty approximately the size of a burger bun using hands or a ring mold lined with plastic wrap.
04 - Heat a nonstick skillet over medium heat and add a small amount of butter or oil. Cook patties for 3 to 4 minutes per side until golden and crisp, then transfer to a plate.
05 - Place half the cheese on two patties, then top with remaining patties. Press gently to sandwich.
06 - Clean skillet, add butter or oil, and cook sandwiches over medium-low heat for 2 to 3 minutes per side, pressing lightly until cheese melts and buns become crisp and golden.
07 - Slice sandwiches and serve immediately while hot.

# Expert Suggestions:

01 -
  • The crispy chewy ramen crust gives you that perfect fried noodle texture you usually only get as a garnish but here it is the main event
  • It hits that nostalgic comfort food spot while feeling like something entirely new and kind of brilliant in its simplicity
02 -
  • Let the noodles cool for a few minutes after draining so they dont cook the eggs into scrambled bits when you mix them
  • Press the patties firmly but not so hard that they become dense and tough they should hold together but still have some texture
03 -
  • A ring mold or lined small bowl helps make perfectly round uniform patties but honestly the slightly irregular homemade ones look cooler
  • Low and slow heat for the second fry gives the cheese time to melt without burning the outside
