Caprese Grilled Cheese Melt (Printable)

A flavorful Italian-style melt with fresh mozzarella, basil, tomatoes, and a balsamic glaze finish.

# What You'll Need:

→ Bread & Dairy

01 - 4 slices sourdough or Italian bread
02 - 4 oz fresh mozzarella cheese, sliced
03 - 2 tablespoons unsalted butter, softened

→ Vegetables & Herbs

04 - 1 large ripe tomato, thinly sliced
05 - 8 to 10 fresh basil leaves

→ Condiments & Garnish

06 - 1 tablespoon balsamic glaze
07 - Salt and freshly ground black pepper, to taste

# How to Make It:

01 - Evenly spread softened butter on one side of each bread slice.
02 - Place two bread slices butter-side down on a clean surface. Layer with mozzarella, tomato slices, and basil leaves. Season lightly with salt and pepper.
03 - Drizzle balsamic glaze over the tomato and basil layers.
04 - Top with remaining bread slices, butter-side up.
05 - Preheat a large nonstick skillet or grill pan over medium heat.
06 - Place sandwiches in the pan and cook 3 to 4 minutes per side, pressing gently, until bread is golden and cheese has melted.
07 - Remove from pan and let rest for 1 minute. Slice in half and drizzle with extra balsamic glaze if desired. Serve immediately.

# Expert Suggestions:

01 -
  • The balsamic glaze cuts through the rich cheese and adds this sweet acidic punch that makes every bite interesting
  • It takes twenty minutes from start to finish but tastes like something from a fancy Italian cafe
02 -
  • Medium heat might feel too slow but high heat burns the bread before the cheese melts. I ruined three sandwiches learning this lesson.
  • The one minute rest period is not optional. The cheese needs time to set slightly or it will slide right out when you cut it.
03 -
  • Use a cast iron skillet if you have one, it creates the most even golden crust and holds heat perfectly
  • Spread a thin layer of pesto on the bread before adding the cheese for an herbaceous kick that will make you never want regular grilled cheese again
